docs: update CT107 details (MailPit email testing server)

Browse Source 
CT107 runs axllent/mailpit with Web UI on port 8025 and SMTP on
port 1025. Max 5000 messages, accepts any SMTP auth. Docker-compose
at /opt/mailpit/. Updated PVE description and tags.
