docs: update CT126 details (Headscale v0.28.0 control server, 17 nodes)

CT126 runs Headscale v0.28.0 as self-hosted Tailscale control server
with 17 devices (Mac, iPhone, Android, Apple TV, Linux servers).
Ports 8080/9090/50443 forwarded via OpenWRT DNAT. Also runs Tailscale
client and Watchtower. Updated PVE description and tags.
