docs: update CT108 details (12 Python microservices, supervisord+uv)

manager: phone-ip-inspector, holiday-checker, pokedex-service,
pokemon-radar-api, person, hoarder-automation, url-cleaning-tool,
lunar-converter, pogo-viewer, pogo-code-share (streamlit),
cloudflare-error-page, oidc-login-demo. All RUNNING. Updated PVE
description and tags.
